Tradition decreed that around the time of the Feast of Sant Joan on 24th June the still tender walnuts and aromatic herbs were gathered from the forests of the Catalan Pyrenean foothills. These were then used to produce the liqueur at the beginning of the summer. The Gou family - known in Olot by the Catalan nickname ´Russet´, meaning ´blondie´ due to their hair colour- started to make and commercialise their own Ratafia over a century ago. The 4th generation of the same family continues to produce this liqueur made from unripe walnuts macerated with some 20 aromatic plants and spices, amongst them, nutmeg, cinnamon, cumin and star anise.
