Ingredients:
Pig shoulder, salt and lard
Storage:
Keep it in a dry, cool and airy place. Always protect any exposed meat with some fat and rind strips –you should save these when you first start cutting the ham. Alternatively, you can grease the part that has been cut with some olive oil to prevent it from getting dry.

Description:
Since Queen Isabel II granted the town of Trevelez the privilege to stamp her royal seal on all the hams produced in the area, the local artisans or ´jamoneros´ have taken good care in keeping the traditional methods of preparation alive. This heritage has been assimilated by Joaquin Gonzalez -in the picture- and his two daughters, who since 1968 have been devoted to the production of this delicacy.

Trevelez is a charming village of white houses and narrow pebbled streets located 1500 m high in the Alpujarras Mountains of Granada. Its climate, characterised by cold and dry winters, hot summers and strong winds that blow from the peaks of the Sierra Nevada Mountains, makes this a unique product.

This shoulder has a minimum curing period of 12 months and has been produced following 100% natural methods.
